NOOH by La Coste is selected by Madame Figaro to illustrate alcohol-free wines and this new way of consuming.
Jérome Schehr, in charge of development at the estate, says: "We noticed that visitors to the estate were increasingly asking for this type of drink. For us, winemakers, it was an approach consistent with our expertise. But it took three years of research and development to achieve the desired quality. After much trial and error, we opted for dealcoholization of our wines under vacuum at low temperature, i.e. 35-40°C, a less industrial technique than reverse osmosis. Today, we offer a sparkling rosé and a still rosé, this is probably just the beginning."
